The old one shouldn’t be able to accept links - but that’s probably a federation issue, that it may accept them on your own instance but not pass them on to the community.
That’s true. However, FOSS usually means that it’s free (F) and open-source (OS). Music isn’t usually open source - they don’t usually share the sheet music or allow free editing/covering/forking of the music. So the worlds don’t completely mesh. You can look at a FOSS solution for managing music, but you won’t find a ton of FOSS music.
The problem is that music isn’t generally FOSS - people would like to be paid for their work. So the next best thing is to set up your own music service where you can add your own music.

I’ve tried a bunch but I usually just use the web UI these days - using miniflux, which is about as minimalistic as it gets.
More coffee is usually the answer.

But question asked, let’s give you an answer.
Each server or instance (like Lemmy.ml, wayfarershaven.eu, Lemmy.world) has its own communities. You can tell by the URL. For example,!onebag@wayfarershaven.eu is a community on the Wayfarers Haven instance. Each instance can federate with each other, so as a Lemmy.ca user, you can view your server’s copy of a community. You don’t need to log into each server individually.
There is no real /r/all because no one server will likely have everything. The closest thing to do is go to the main page of your instance, Lemmy.ca, and then click “all“ instead of “local” at the top.
